More Food
Every year we are humbled by the kind hospitality shown to us by our Chinese hosts. After a busy day teaching at the school, it is so wonderful to be welcomed to the table by our friends here. Tonight some of us had our favorite dishes a restaurant that specializes in food from northern China. We had what we lovingly refer to as "Beijing Tacos" (cumin-seasoned spicy mutton wrapped up with leeks, cucumber strips and parsley in something akin to a taco shell), mutton on toothpick skewers, Chinese candied sweet potatoes, mutton and mushroom filled dumplings, pork dumplings, and several other dishes. Wow! We all had a warm feeling as we reflected on our day of training and small group activities with the teachers. We shared humorous happenings from our day and learned more about each other as we talked about family and our daily lives. Making this type of cross-cultural connection is what makes this trip a unique and unforgettable experience. (Posted by Audrey Fetters)
